Prepare the sugar syrup: In a small saucepan, combine the sugar and water. Heat over medium heat, stirring until the sugar dissolves. Remove from heat and let it cool.

Mix the ricotta and lemon: In a blender or food processor, combine the ricotta cheese, lemon juice, and lemon zest. Blend until smooth.

Combine with syrup: Add the cooled sugar syrup to the ricotta mixture and blend until well combined.

Chill the mixture: Pour the mixture into a shallow dish and refrigerate for about 1 hour, or until it starts to firm up.

Freeze the sorbet: Transfer the chilled mixture to an ice cream maker and churn according to the manufacturer’s instructions until it reaches a sorbet-like consistency. If you don’t have an ice cream maker, pour the mixture into a shallow container and freeze, stirring every 30 minutes until it reaches the desired consistency.

Serve: Scoop the sorbet into bowls or glasses and serve immediately, or store in the freezer until ready to serve.

  • To make more: Double the ingredients to make about 8 servings. 
  • For a smoother texture, strain the ricotta mixture through a fine mesh sieve before freezing.
