1 cup mochiko (sweet glutinous rice flour)
¾ cup water
¼ cup sugar
1 tablespoon matcha powder

Mix Dry Ingredients: In a microwave-safe bowl, whisk together the mochiko, sugar, and matcha powder until well combined.
Add Water: Gradually add the water to the dry mixture, stirring until smooth and fully dissolved.
Microwave the Mixture: Cover the bowl loosely with plastic wrap or a microwave-safe lid. Microwave on high for 2 minutes. Stir the mixture with a wet spatula, then microwave for another 1-2 minutes until the dough becomes slightly translucent.
Shape the Mochi: Dust a clean surface with cornstarch. Transfer the mochi dough onto the surface and sprinkle more cornstarch on top. Divide the dough into 8 equal parts and flatten each piece into a circular shape.
Fill and Seal: Place a small amount of red bean paste in the center of each mochi circle. Pinch the edges together to seal and shape into a ball. Dust off any excess cornstarch.
