Malpua are sweet, deep-fried pancakes soaked in sugar syrup. They are often served during festivals and special occasions.

1 cup all-purpose flour
1/2 cup semolina
1 cup milk
1/2 cup sugar
1/4 teaspoon cardamom powder
Ghee for frying

Make Batter: In a bowl, mix 1 cup of all-purpose flour, 1/2 cup of semolina, and 1/4 teaspoon of cardamom powder. Add 1 cup of milk and mix well to form a smooth batter.
Prepare Syrup: In a pot, combine 1/2 cup of sugar and 1/2 cup of water. Bring to a boil and simmer for 5 minutes.
Heat Ghee: Heat ghee in a pan over medium heat.
Fry Malpuas: Pour a ladleful of batter into the hot ghee and fry until golden brown. Remove and drain on paper towels.
Soak in Syrup: Soak the fried malpuas in the hot syrup for a few minutes.
Serve: Serve hot, garnished with chopped nuts.
