1 package (17.3 oz) frozen puff pastry (2 sheets), thawed but cold
2-3 ripe peaches, sliced
2 tablespoons honey
1 teaspoon vanilla extract
1 large egg (for egg wash)
1 tablespoon water

Preheat the Oven: set your oven to 375°F (190°C). This ensures it’s hot enough to bake the puff pastry to a golden brown.
Prepare the Peaches: in a bowl, toss the peach slices with 2 tablespoons of honey and 1 teaspoon of vanilla extract. This will coat the peaches with a sweet and aromatic glaze.
Roll Out the Puff Pastry: roll out the thawed puff pastry sheets on a lightly floured surface. Cut each sheet into 6 equal round. You should have 12 round in total.
Assemble the Tarts: place a few peach slices in the center of each puff pastry round. Fold the edges of the pastry slightly over the peaches to create a border. This helps keep the peaches in place and gives the tarts a nice shape.
Prepare the Egg Wash: in a small bowl, whisk together 1 large egg and 1 tablespoon of water. Brush the edges of the pastries with this egg wash. This will give the tarts a beautiful golden color when baked.
