Ingredients (8)

1 pound (2 sheets) Puff Pastry, thawed according to package instructions 

1 Egg (for egg wash) 

8 ounces Cream Cheese, softened 

¼ cup Granulated Sugar 

1 teaspoon Vanilla Extract 

1 tablespoon Lemon Juice 

1 cup Mixed Berries (blueberries, raspberries, strawberries) 

2 tablespoons Powdered Sugar (for dusting)

Prepare the Puff Pastry: preheat your oven to 400°F (200°C). 
On a lightly floured surface, roll out the puff pastry sheets and cut each sheet into 4 equal squares.

Make the Cheesecake Filling: in a medium bowl, beat the softened cream cheese, granulated sugar, vanilla extract, and lemon juice until smooth and creamy.

Assemble the Tarts: place a spoonful of the cheesecake filling in the center of each puff pastry square. Top with a few mixed berries. Brush the edges of the pastry with the egg wash (1 egg beaten with 1 tablespoon of water). Fold the edges of the pastry over the filling, leaving the center exposed.

Bake the Tarts: place the tarts on a baking sheet lined with parchment paper. 
Bake for 20 minutes or until the pastry is golden brown and puffed.

Finish and Serve: dust the tarts with powdered sugar before serving. 
Enjoy with a dollop of whipped cream or a scoop of ice cream for an extra treat. Preheat the oven to 350°F (175°C). Grease an 8×8 inch baking dish.
