3 large eggs 

1 cup sugar 

1 cup shredded coconut 

1/2 cup almond flour 

1/4 cup all-purpose gluten-free flour 

1 tsp vanilla extract

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan to prevent sticking.

Beat Eggs and Sugar: In a mixing bowl, beat 3 large eggs and 1 cup of sugar until the mixture is light and fluffy.

Combine Dry Ingredients: Fold in 1 cup of shredded coconut, 1/2 cup of almond flour, 1/4 cup of all-purpose gluten-free flour, and 1 tsp of vanilla extract into the egg mixture.

Bake the Cake: Pour the batter into the prepared cake pan. Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
