Mix Dough: In a bowl, combine 2 cups of almond flour, 1 cup of powdered sugar, and 2 teaspoons of cinnamon. Add 2 egg whites and 1 teaspoon of lemon juice, mixing until a dough forms.
Roll and Cut: Roll out the dough on a lightly floured surface to about ¼ inch thickness. Use a star-shaped cookie cutter to cut out cookies.
