Preheat Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
Cream Butter and Sugar: In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. This should take about 3-4 minutes.
Add Egg and Almond Extract: Beat in the egg and almond extract until well combined.
Combine Dry Ingredients: In a separate bowl, whisk together the flour and baking powder. Gradually add this to the butter mixture, mixing until just combined.
Shape Cookies: Roll the dough into small balls (about 1 inch in diameter) and place them on the prepared baking sheet. Flatten each ball slightly with the back of a fork or your palm. Optionally, press a whole almond into the center of each cookie.
